Ingredients

  • 2 kg firm, ripe tomatoes, quartered
  • 1 large cucumber, cut into 2.5cm batons
  • 2

Method

  • Place the tomatoes, cucumber, onions and green pepper in a large serving bowl.
  • Whisk together the olive oil and red wine vinegar. Season with salt. Drizzle as much or as little as you like over the chopped salad, tossing through to coat.
  • Cut the feta into 4 slabs.
