Salt cod is dried, salted cod that needs to be rehydrated and de-salted before use. Looking like a dried-up leather shoe, it soon softens once rehydrated and is really tasty when cooked. It is extremely popular in Mediterranean countries and particularly Portugal, where it’s known as bacalhau. Often eaten Tapas style, this recipe has an affinity with Greek Meze and is delicious with salad or grilled vegetables.
