Dressing

  • 1 pomegranate
  • 2 tsp Manuka honey
  • 1 red pepper, fairly small dice

Method

Dressing

  1. Cut the pomegranate into 4 quarters and de-seed. Collecting any escaping juice, place half the seeds in a food processor and blitz. Strain the juice and pour into a small pan, add the honey and bring to the boil, reduce by half.
  2. Place all the other dressing ingredients into the bowl with the pomegranate juice and comb
