  • 6 cherry tomatoes
  • 6 Niçoise olives
  • 1 shallots

Method

  1. Cut the cherry tomatoes in half and remove the stones from the olives.
  2. Dice the shallots.
  3. Pick the leaves from the mint, basil and coriander.
  4. Separate the leaves of the mache and wash.
  5. Dice and peel the cucumber, cut long ways twice then remove the seeds and cut into large dice.
