This slow-cooked pork is inspired by the cuisine at Restaurante Santafereño and El Rancho de Lalo and made possible because La Carniceria Los Andes does plump juicy hands of pork at a fantastic price. It is marinated for up to 48 hours with cumin and coriander and a Caribbean-coast twist of scotch bonnet and thyme. Cooked for at least 8 hours, it is soft and meltingly tender either as a main course or as delicious leftovers on tortillas or arepas.
