The Italians love stracciatella ice cream and give it a much more grown-up twist than our ‘choc chip’ by using dark bitter chocolate. The contrast of the super smooth gelato and the hard chocolate pieces works beautifully and this flavour was always my favourite as a kid.

This method of making gelato is known as a base bianca. It has no eggs and relies on heating the milk to thicken it slightly.
