Courgettes in Red Wine

    • 12 courgettes
    • ¼ pound finely chopped Spanish onion
    • 4 tablespoons


    Cut courgettes into slices ½ inch thick and sauté with finely chopped onion in olive oil and butter for 5 minutes, stirring frequently. Add wine, and season to taste with salt and freshly ground black pepper. Simmer for 5 minutes.

    Just before serving, sprinkle with a little lemon juice, olive oil and finely chopped parsley.
