Whiting Fillets Stuffed with Prawns

This dish is a combination of Eastern and Western techniques. The flavours are very Japanese, but the just-cooked fish is very Western. Apart from whole steamed fish I find the Chinese tend to overcook fish. Even in Japan I found the cooked fish too well done for my liking.
