This fish is crispy on the outside and soft and delicious on the inside, and the sauce is delicious on rice. The approach to the sauce is typically Chinese except that I try never to use cornflour as a thickener. I find that reduction or the addition of another ingredient often works better. When ketchup or tomato sauce is called for you’ll get a much better result from making your own tomato jam or paste. That little extra effort will produce a sauce of a greater quality.
