The garlic and rosemary-infused olive oil makes this soup really special, so even if you think it sounds pointless please give it a try! It’ll make the world of difference and is a neat trick to add intensified flavours when cooking.


  • 2 garlic cloves, peeled and finely chopped
  • 2 sprigs rosemary, leaves picked off and finely chopped

Put the chopped garlic and rosemary into a small bowl with the olive oil and set aside for 10 minutes to infuse.

Heat a pot on medium-low heat and add the infused oil to the pot along with the onion, parsnips and apple and fry for 10 minutes.
