Fresh figs, a good bourbon, and chai masala are three of my favorite “food groups,” and this drink is my ode to that happy trio in one cocktail. I prepare the fresh fig extract in large jars when figs are in season and let them sit in my pantry. That way, I can make a bourbon iced chai whenever I like. Over time, the figs absorb the bourbon. Once I’ve depleted the extract, I cook the fruit left behind to make jam or fig butter.
