In this chapter, I’ve included recipes for some of my favorite drinks, with and without alcohol. When making a drink, decide whether you’re going to serve it with food; or at the end of a meal, as a stand-in for dessert; or to give yourself a boost during the day. Yogurt-based drinks such as lassis aid with digestion and calm the body at the end of a spicy meal. Other drinks, like cardamom-infused iced coffee, energize and stimulate the senses.

My grandmother had a tradition of ending every large family dinner or celebration with a glass of port wine, which was also the drink of choice at Catholic weddings in India, to accompany the wedding cake. I prefer a glass of red or white with a meal, and sometimes a flute of Champagne.
