This is a very convenient way of adding veggies to your children’s diet. In Colombia, we eat rice twice a day so adding vegetables to it is a way of introducing our children to them in a mild and subtle way.

Ingredients

  • 2 tablespoons oil
  • ½ cup diced onion
  • 2 cups

Method

  1. In a medium pot over medium heat, place the oil. Add the onions and sauté for 2 minutes; add the red peppers, rice, and salt and sauté 2 more minutes.
  2. Add the stock and bring to a boil.
  3. As soon as you see the rice on the surface, and most of the liquid has evaporated, cover the pot; reduce to minimum heat and cook covered for 20 minutes.
