  • 24 spring onion (scallion) bulbs
  • 50 ml (1⅔ fl oz) olive oil


Trim the onions and remove the tops and outside layers. Cut the onions in half, across the grain to reveal the individual circles of onion. Heat the olive oil in a frying pan over medium heat. Add the onions, cut side down, and cook until golden. Turn over the onions and reduce the heat to low. Add the butter and cook gently for 8–10 minutes. Keep warm until required.
