Pour the nitrogen into a nitro bowl and leave it to freeze for 1 minute until the bowl tempers to the nitrogen and the nitrogen stops boiling. Add the raspberries and leave for 30 seconds to freeze completely. Using a slotted spoon, remove the raspberries and wrap in a clean tea towel (dish towel). Crush the raspberries within the tea towel using a rolling pin. All the segments should separate.
