These little green ladies fingers (okra) are so tasty but unfortunately the sliminess of them puts some people off. In this recipe they are fried first and then curried. This helps to reduce the sliminess.

My aunties always choose only the straight and small ladies fingers; they swear that if one is bent it means there are grubs in it. In any case, they should be small, as large ladies fingers can become tough and woody.
