My First Discovery of Brunch was at Hug’s an Italian place around the corner from the Sunset Marquis. They had this dish of Tagliatelle with eggs, Bacon and Spinach, like a carbonara. At First it seemed weird for Breakfast, but eggs and bacon work, and the natural Partners for Asparagus are egg and cheese, Particularly parmesan

Ingredients

Confit egg yolks

  • vegetable oil
  • 4 duck egg yolks

Method

To confit the egg yolks

Half fill a small saucepan with vegetable oil. Carefully add the egg yolks, making sure you keep them separate, and cook in the oven at 65°C for 1 hour.
