I have a frittata pan that I bought in Italy that you just turn to cook the other side. The next time you travel there, treat yourself to one, or better yet to two, in different sizes.

Ingredients

  • 6 tablespoons extra-virgin olive oil
  • 2 potatoes, peeled and cubed
  • 2 onions, sliced

Method

Heat 2 tablespoons of the olive oil in a medium frying pan, and fry the cubed potatoes until they are golden brown. Place in a bowl, and set aside. Add another 2 tablespoons of olive oil to the same pan,
