  • 9 oz. (250 g) bittersweet chocolate, or 1 generous cup (


Melt the chocolate in a double-boiler, or heat the cocoa powder with the water and sugar, stirring from time to time.

When the chocolate is melted, or the cocoa comes to a boil, remove from the heat, and add the cream and butter. Whisk briskly for 2 minutes.
