SQUASHES AND PUMPKINS RARELY GET USED AT HOME TO THEIR FULL POTENTIAL, except perhaps at Hallowe ’en. They come in all different shapes, colours, and sizes, and some have more worthwhile culinary qualities than others. My favourite is the butternut squash; it’s always sweet and has a deep, vibrant colour with a better ratio of flesh to skin than some of the larger varieties.
