In addition to being a great filling for fatayer, this spinach mixture makes a delicious salad too.
Chop the spinach into bite sized pieces and wash it thoroughly to get rid of any grit. I wash it by filling a bowl or sink with cold water and immersing the spinach in it. After swishing it around for a few minutes, gather it together with your hands and transfer it to a colander. Then re-fill the bowl and repeat the procedure several times until the water is free of grit when the spinach is re
