Keep in mind that the “seven-minute” title expresses a rather idealistic goal. In fact, this sweet, cloudlike frosting may take as long as 20 minutes to reach its proper shiny and voluptuous state. It will be gorgeous, and worth every minute.

Ingredients

  • 1 cup sugar
  • ¼ cup light corn syrup
  • ¼ cup

Method

Bring about 3 inches of water to an active simmer in the bottom of a double boiler or a medium saucepan. Meanwhile, in the top of the double boiler or in a heat-proof bowl that will ht snugly over the saucepan, combine the sugar, corn syrup, water, egg whites, salt, and cream of tartar. Beat with a mix
