On our road trips from San Antonio to the Rio Grande Valley my family passed a multitude of small towns with pickup truck lined café parking lots. As we’d pass these cafes the delectable scent of chicken fried steak would seep into our car. I could practically taste the crispy crust drenched in a thick white gravy. There’s absolutely no chicken in this dish, but it’s definitely a southern Texas favorite. This Texas cafe staple is a tenderized cutlet of top-round beef that is floured and ski
