A good onion soup is easy to make, but there are a few secrets to making it extraordinary: authentic Swiss Gruyère, good broth, and plenty of onions. French onion soup is best made with homemade beef broth, but canned low-sodium beef broth will work. I sometimes use fresh turkey or duck broth.
