Don’t confuse this sauce with mustard or mustard fruits. Many Italian condiment sauces are called mostarda even if they contain no mustard at all. Mostarda d’uva is traditionally made around the time of the grape harvest, when there is plenty of fresh grape juice around. It’s usually made with red grape juice, but I sometimes make it with bottled white grape juice because the red grape juice I find in the supermarket is made from Concord grapes and has too distinctive a flavor
