  • olive oil
  • 1 small onion, finely sliced
  • 4 salted anchovy fillets
  • 2

Method

Heat a little olive oil gently in a large pan, add the onion and fry over a low heat for 5 minutes. Add the anchovies, tomatoes, garlic, raisins and vinegar and cook for a further 5 minutes until most of the vinegar has evaporated and plumped up the raisins. Add the spinach or chard and a dash of water, lower the heat and cook for 15 minutes.
