For this cookie, feel free to chop up your favorite semisweet or bittersweet chocolate, or use chocolate chunks made especially for baking. Sandwich two big cookies with the deepest, darkest, deadliest chocolate-fudge ice cream you can find—the perfect answer to all your chocolate dessert emergencies. You can scoop the ice cream in advance and store the scoops, well wrapped, in the freezer so they are ready to go when you want to make your sandwiches. The cookies will keep, stored separately in a tightly covered container, for up to 3 days, or frozen for up 1 month (make sure to let them thaw before sandwiching with ice cream).
