Marseillan, facing the port of Sète at the other end of the Bassin de Thau, is a charming holiday fishing town, with one or two lively dockside restaurants. It is still home to the Noilly Prat vermouth factory. Made here for 200 years, herb-flavoured Noilly Prat is known as the Rolls Royce of dry vermouths. Vermouth does not have to be made into martinis, it makes a cooling pre-dinner drink in a tumbler with ice and lemonade.
