Shrimp Creole is quick to prepare but still features a good depth of flavor. Serve with pita bread for a quick lunch or dinner.

  • 2 pounds shrimp, shelled and deveined
  • 2 tablespoons green seasoning
  • 1 tablespoon canola oil
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 1 small red (bell) pepper, seeded and chopped
  • 1 clove garlic, finely chopped
  • 1 (16-ounce) can chopped tomatoes
  • 1 teaspoon coarse salt
  • 1 teaspoon hot pepper sauce
  • 1 bay leaf

  1. Combine the shrimp and green seasoning and set aside in the refrigerator for 1 hour.
  2. Heat the canola oil in a medium deep frying pan and add the onion, celery, and bell pepper. Sauté until the onion is soft. Add the garlic, stir well and cook for 1 to 2 minutes more.
  3. Add the tomatoes, salt, and hot pepper sauce. Mix well and add the bay leaf. Simmer, covered, for 20 minutes.
  4. Add the shrimp and cook until they only just turn pink. Remove from the heat and serve with rice.
