Taquitos, or “little tacos” in Spanish, are corn tortilla cylinders tightly rolled around fillings such as shredded meat, and deep-fried (or baked). Mixing shredded chicken with plenty of cheese and a bit of green chilies helps to moisten this filling and keeps it from falling out of the rolls.
