Bhatsa marku is not always meaty. Nomads will take what they can get, and during summertime the meadows are filled with wild mushrooms – their fibrous texture and full-bodied taste make them a really delicious alternative. Yeshi is great at identifying what mushrooms can and cannot be consumed. We’ve suggested oyster mushrooms for this recipe, but do go for something wilder if you can come by it safely.</
