Yeshi calls this sort of dish ‘nomad food’: wholesome and filling, it’s everything the nomad needs, and is often made on the first day at a new camp. Every month or so, relatives from his village come to help family members move the tent and animals to the next grazing spot, and at the end of a very hard day’s work, sometimes in dire weather, someone will cook this up and all will be well.
