A kipper – a whole herring that has been butterflied (sliced in half from head to tail and opened up) and cold smoked – is an oily fish and the smoked plump flesh can be deliciously juicy. Most fishmongers and fish vans in the Highlands sell kippers but you can also buy them at the fish counter in the supermarket.
