Ingredients: 15 ml/1 tbsp oyster sauce; 15 ml/1 tbsp sesame oil salt and ground black pepper; 2 shredded spring onions (scallions) and fresh coriander (cilantro) leaves, to garnish; 115 g/4 oz/2 cups green beans; 225 g/8 oz/2½ cups beansprouts; small bunch garlic chives, about 50 g/2 oz; 30 ml/2 tbsp soy sauce; 450 g/1 lb egg noodles; 2 garlic cloves, sliced; 45 ml/3 tbsp vegetable oil; 16 uncooked tiger prawns (jumbo shrimp), peeled, tails left intact, and deveined; 1 skinless, boneless chicken breast portion, thinly sliced; 2 fresh red chillies, seeded and chopped; 5 ml/1 tsp chopped fresh root ginger; 2 lap cheong, total weight about 75 g/3 oz, rinsed and sliced (optional)
