Another example of the Chinese influence in Thai cooking. Lap Cheong is a special air-dried Chinese sausage and is available from most Chinese supermarkets.

Ingredients

  • 450 g/1 lb egg noodles
  • 45 ml/3

Method

  1. Cook the noodles in a large pan of boiling water, according to the instructions on the packet. Drain well.
  2. Heat 15 ml/1 tbsp of the oil in a wok or large frying pan and
