In Thailand, you are never very far from a noodle seller. This popular food is bought from breakfast to bedtime, from special restaurants and kiosks, floating barges or streetside stalls. Most of the noodles on sale are made from rice, although you will also find mung bean noodles, whose almost glassy appearance makes them a popular choice for stir-fries. Their bland taste means that they are a good vehicle for other flavours, and they are often served simply, with a selection of condiments or dips.
