These are year-round pastries that are decorated at Christmastime, just like we do with real trees. They are a variation of the recipe for Angelica Points which appears in The Professional Pastry Chef: Fundamentals of Baking and Pastry. These, however, are cut into a more elongated triangle and covered with green marzipan rather than untinted.
