Sockeye salmon from the Pacific Northwest is one of nature’s most delicious foods, no matter the species: coho, king, sockeye, steelhead or spring. It is truly food of the ocean gods. Its delicate buttery flesh is embellished with the sweetness and slight acidity of this simple-to-make glaze.

Method

In a medium saucepan, stir together the maple syrup, orange juice, orange zest, bourbon, miso, black pepper and salt. Warm the mixture over low heat and cook for 15 minutes. Remove saucepan from heat, whisk in the garlic and set aside to cool at room temperature.
