Here’s a colorful, fragrant, and intensely flavorful basil marinade that’s great for chicken and seafood. Set about a third of the marinade aside to use as a basting sauce. If using the marinade for chicken, allow two hours; marinate seafood for one hour.

Method

Combine the olive oil, lemon juice, boiling water, garlic, basil, salt, and pepper in a food processor or blender and process to a smooth paste. The marinade can be refrigerated, tightly covered, for at least 3 days.
