This is a very simple, but gloriously delicious potato dish, which is often accompanied by Deep-fried Soft Puffed Bread for breakfast or high tea. Alu Bhaji can also be served as an accompaniment to a lentil dish and with any other type of bread for a satisfying vegetarian meal.

Ingredients

  • 60 ml/4 tbsp mustard oil or sunflower oil 1 medium onion, finely chopped

Method

  1. Heat the oil over a medium heat until smoking point is reached. Add the onion and chilli and fry for 7-8 minutes, stirring often, until the onion is beginning to colour.

  2. Stir in the turmeric and cumin and cook for about 1 minute.
