These sweet potato dumplings, Mitha Alur Pantua, are spiced with cinnamon and cardamom and deep-fried to a rich brown colour. They make a delicious dessert served with a dollop of whipped cream and some fresh fruit. Traditionally, the dumplings are soaked in a spiced sugar syrup, but here the sugar and spices are added to the dumpling mixture instead, making the finished dessert slightly less sweet.
