Crunchy and delicious, Luchis are always made for Indian weddings and many other special occasions, served with meat curries or vegetable dishes and used to scoop up the juices, providing a contrast to the soft ingredients. Allow three or four breads per person, but make spares - they will be eaten!

Ingredients

  • 275 g/10 oz/ cups plain (all-purpose) flour, plus a little extra for dusting

Method

  1. Sift the flour into a large bowl and mix in the nigella seeds, salt and sugar. Rub in the ghee or butter. Gradually add the water and mix until a stiff dough is formed.

  2. Transfer to a lightly floured surface and knead for 5 minutes, until the dough is soft and pliable. Cover the bowl with a damp cloth and leave to rest for 20 minutes.
