Papris are a very popular snack in central India, especially during the festival of colours (Holi), which is celebrated throughout the country in the spring. The predominant flavour and aroma comes from the small amount of pungent dried fenugreek (kasuri methi) used. Serve with Raita or a spicy fruit chutney.


  • 225 g/8 oz/2 cups gram flour (besan), sifted, plus extra for dusting
  • a pinch of bicarbonate of soda (baking soda)
  • 5 ml/1 tsp salt, or to taste
  • 5 ml/1 tsp chilli powder
  • 5 ml/1 tsp cumin seeds
  • 15 ml/1 tbsp dried fenugreek leaves (kasuri methi)
  • 15 ml/1 tbsp sunflower oil or light olive oil
  • vegetable oil, for deep-frying


  1. In a mixing bowl, mix the gram flour, bicarbonate of soda, salt, chilli powder, cumin seeds and fenugreek leaves.

  2. Make a well in the centre, add the oil and mix well.

  3. Add 125ml/4fl oz/½ cup water and mix until a dough is formed.

  4. Transfer to a lightly floured surface and knead it briefly, then form the dough into a large flat cake.

  5. Dust with a little flour and roll out thinly to a 30cm/12 in circle about 2.5mm/Jdn thick.

  6. Using a round cookie cutter, cut out as many small circles as possible, then gather up the remaining dough and roll again. Cut out into circles as before. You should end up with about 24 small circles.

  7. Heat the oil in a wok or other suitable pan for deep-frying over a medium heat. Fry the rounds in hot oil in two or three batches, until they are crisp and golden brown.

  8. Drain on kitchen paper and serve. Once fried, they will keep well in an airtight container for up to a week.
