Papris are a very popular snack in central India, especially during the festival of colours (Holi), which is celebrated throughout the country in the spring. The predominant flavour and aroma comes from the small amount of pungent dried fenugreek (kasuri methi) used. Serve with Raita or a spicy fruit chutney.
In a mixing bowl, mix the gram flour, bicarbonate of soda, salt, chilli powder, cumin seeds and fenugreek leaves.
Make a well in the centre, add the oil and mix well.
