Papris are a very popular snack in central India, especially during the festival of colours (Holi), which is celebrated throughout the country in the spring. The predominant flavour and aroma comes from the small amount of pungent dried fenugreek (kasuri methi) used. Serve with Raita or a spicy fruit chutney.
