Before the Civil War, flummeries were quite popular as breakfast and supper foods, especially for children, or following dinner as a dessert. Cornstarch pudding and tapioca eventually pushed flummery off the Victorian menu, yet this old-fashioned treat is well worth reviving.

The word flummery comes from the Welsh word llymru.18 In Wales, it was a sour dish generally made with oatmeal and butte
