Milk Chocolate and Lime Curd | Lemon Soda Sphere | Crystallized Verbena Leaf

Why These Flavors Work

Milk chocolate’s sweetness is enhanced by the sour-bitter tastes of the lime. They are frontal flavors, very pronounced and identifiable, yet in this preparation they are both texturally smooth and creamy: opposite tastes/one texture. The lemon soda sphere has more of a background citrus flavor. The crystallized verbena has mostly citrus and floral notes. The verbena leaf is a brief note that is friendly with the other flavors without imposing. Milk chocolate and citrus get along very well.



Plating Procedure

  1. Using an offset spatula, place the curd disk on the plate.
  2. Gently place a carbonated lemon soda sphere on top of the disk.
  3. Put a crystallized verbena leaf on top of the sphere. Serve immediately.
