Coconut Ice Cream | Black Sesame Seed Sauce

Why These Flavors Work

Coconut is a mild to background flavor that is present but not as much as black sesame paste, which is a frontal flavor; this is why the coconut is used here in a larger amount than the black sesame seed paste. The coconut supports the strength of the black sesame paste without fading into the back completely.



Plating Procedure

  1. Dip the tip of a 25-cm/10-in offset spatula in the black sesame seed sauce and spread about 15 g/.5 oz on a plate.
  2. Place a coconut ice cream rectangle over the sauce.
  3. Spoon a small drop of passion fruit gel on top of the coconut ice cream. Place a small basil leaf on top of the gel. Serve immediately.
