Why These Flavors Work

Huckleberry and lemons are a classic flavor combination; the lemon flavor enhances the huckleberry flavor, which is very intense and similar to wild blueberries but with citrus notes. Vanilla acts as the background flavor that complements the frontal flavors. The anise hyssop adds a light anise flavor, which enhances the huckleberry and lemon further.



Plating Procedure

  1. Spoon 30 g/1.06 oz of lemon streusel into a bowl.
  2. Using a slotted spoon, scoop out 20 g/.71 oz of huckleberry compote from the cooking liquid and place it on top of the streusel.
  3. Pipe 60 g/2.12 oz of vanilla cream into the bowl, on top of the streusel. Tap the bowl to even out the surface.
  4. Spoon 20 g/.71 oz of lemon Joconde crumbs on top of the cream and even them out with the back of a spoon.
  5. Put the encapsulated huckleberry compote near the center of the bowl, on top of the crumbs.
  6. Place 1 anise hyssop leaf on top of the sphere. Serve immediately.
