Why These Flavors Work

Jasmine rice has a very floral and aromatic flavor that is not necessarily sweet, but it is a flavor that is very agreeable with desserts. Vietnamese coffee makes sense here because it is also very aromatic; it can share this quality with the jasmine without overwhelming it. There is also a wonderful temperature difference in this dessert that comes from combining the hot pudding with the ice cream.

Plating Procedure

  1. Unmold a half-sphere of Vietnamese ice cream from the silicone mold. Carefully and quickly dip it in the melted chocolate.
  2. Place the chocolate-covered ice cream in the middle of a bowl.
  3. Pour 113 g/4 oz of the warm jasmine rice pudding on top of the ice cream.
  4. Place a tube of coffee jelly partially on the side of the bowl and partially on the pudding.
  5. Sprinkle a pinch of instant Vietnamese coffee on top of the rice pudding in a straight line across the jelly. Serve immediately.
