Serving Instructions

  1. Preheat a convection oven to 160°C/325°F
  2. Lightly grease a tray of madeleine molds with a layer of nonstick oil spray. These trays come in two sizes, 12 pieces and 18 pieces. Use a 12-piece tray for each round of service.
  3. Pipe the madeleine batter into the prepared mold. Bake until light golden brown, about 7 minutes.
  4. Remove the tray from the oven and turn it over so that the baked madeleines come out.
  5. On the scalloped side of the madeleines, brush 5 g/.17 oz orange blossom water per cookie.
  6. Place the warm madeleines inside a folded napkin.
  7. Place the cream pops on an ice pop stand. Serve immediately.
