Vanilla acts as the general background flavor that ties in the maple (another background flavor) with the praline, which is the frontal flavor in this dessert. It is a very simple cake that is full of textures (soft, crispy, chewy) but must be finished just before it is to be eaten to maintain the integrity of those textures.

Assembly Instructions

  1. This cake is assembled à la minute. Place the crispy feuilles de brick on top of the Genoa bread.
  2. Push the crème brûlée out of the mold directly onto the feuilles de brick.
  3. Sprinkle an even layer of turbinado sugar on top of the crème brûlée and caramelize it using a torch. Serve immediately.
