These are potato patties sold at street food stalls in Northern India. There are many variations, some of which include meat, and they are served with a variety of chutneys such as tamarind or mint and coriander (cilantro). They are a good starter or snack.

  • 500 g (1 lb 2 oz) potatoes, cut into pieces

Method

Cook the potatoes in boiling water for 15 minutes, or until tender enough to mash. Drain well until they are dry but still hot. Cook the peas in boiling water for 4 minutes, or until tender, then drain.
